    He would have to send the samples to a lab, or more likely, send you to the lab directly with a prescription for blood work for them to do the blood draw there.

    He’ll almost certainly use a reference lab. The blood would be drawn in the office and picked up by a courier. But the lipid profile needs to be done after a fast, so it’s possible it might be more convenient for him to send you the next morning to a lab or hospital.

    To gild John de Witt’s answer, CLIA -Clinical Laboratory Improvement Amendments, passed in 1988 – dealt a death blow to most laboratory tests performed in a physician’s office. Much of this was good, some was very bad and very inconvenient for the patient.
